Ascorbic acid

Ascorbic acid, also called Vitamin C, is a water-soluble vitamin. The acid is found in fresh fruits, berries, and vegetables.

It is sometimes added to packaged food or drink as a preservative. Apple juice with this preservative will not impact Saccharomyces cerevisiae and is fine for use in cider making.[1]
